Our bees are located in sparsely populated parts of Sweden in a varied landscape consisting of forests, meadows and scattered small farms. Each harvest is unique and has a different color, taste and consistency. Even bee colonies that stand in the same place year after year produce different types of honey because the weather at that time affects the flowering. The taste of honey is truly the taste of a place. We pride ourselves on letting nature take the time it needs and letting the bees do their work, as they have done for millions of years, before we harvest the honey. Honey needs to mature. It's slow tech, and we call it slow honey.
